Chow Mein

Chow mein is a sure item on many chinese takeout menus. It’s a sweet and sour stir-fried noodle dish which is typically made with chicken, pork and seafood. The taste varies from North America to Asian countries such as Singapore and Malaysia where the dish is popular. In this recipe, I combine tastes from North America and Asia into a fusion dish which is less oily and saucy but equally delicious.


  • Prawns – 300g shelled and deveined
  • Pork – 200g thinly sliced
  • Boneless chicken thighs – 2 thinly sliced
  • Egg noodles – 900g (2 packets store bought)
  • Carrots – 1 big carrot jullianed
  • Red bell pepper -1/2 thinly sliced
  • Baby bok choy – 6 quartered
  • Spring onions – 3 cut into 1 inch pieces
  • Bean sprouts – 100g
  • Garlic – 4 cloves finely chopped
  • Ginger – 2 inch piece finely chopped
  • Shallots – 2 finely chopped
  • Red chillies – 1 finely chopped
  • Soy sauce – 4 tablespoons
  • Oyster sauce – 3 tablespoons
  • Chilli paste – 1 teaspoon (recipe found here or use chilli sauce)
  • Sugar – 2 teaspoons
  • Chicken broth – 1 cup
  • Black pepper powder – 2 teaspoons
  • Lemon juice – 1 tablespoon
  • Vegetable oil – 3 tablespoons
  • Turmeric powder – a pinch
  • Salt – a pinch


  • To make the sauce, add 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, chilli paste, chicken broth and sugar into a bowl, mix well and keep aside.
  • Marinade prawns with turmeric powder, salt and pepper.
  • Marinade chicken and pork separately with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce and 1 teaspoon of black pepper powder.
  • Leave the prawns, chicken and pork in the fridge for about 2 hours.

  • Heat the vegetable oil in a wok and fry the prawns 4 minutes per side. Remove the prawns and set aside.
  • Fry pork and chicken separately until golden and set aside.

  • To the same oil add onions, garlic, ginger and chillies fry until slightly golden.
  • Add the carrots, bell pepper and stir-fry for 2-3 minutes.
  • Add the bok choy and stir-fry for 2 minutes.
  • Add the sauce and bring to a simmer.
  • Add the noodles, bean sprouts and spring onions.
  • Stir-fry on high heat until the noodles get hot.
  • Add the prawns, chicken, pork and stir-fry.
  • Turn off the heat and mix in the lemon juice.
  • Serve hot with cold beer.
